Vegan Banana Bread + Miyoko's Vegan Butter
Banana Bread has long been a breakfast favorite of mine. From making the batter with my kids to the amazing aroma of it baking, this is one of my recipes I hope my kids remember me making with them for years to come. Of course the best part is giving it a try fresh out of the oven with buttery goodness on top..By buttery goodness, I mean Miyoko’s European Style Cultured Vegan Butter.
Plant based and made with Organic Coconut Oil, this butter is a game changer. I love it on so many things like corn on the cob, my morning toast or as a spread on my Banana bread slice. Miyoko’s Vegan Butter melts, browns, bakes and spreads perfectly. It is crafted without the use of dairy or palm oil making it cruelty free, which I love! I am excited to share with you my Vegan Banana Bread recipe which pairs perfectly with Miyoko’s Vegan Butter. It is the perfect blend of dense and moist. No eggs or dairy involved keeping it Vegan friendly and for those inclined to lick a batter bowl or spatula you will be safe with this one!
Recipe:
Vegan Banana Bread
Prep: 10min Cook Time: 60min Total involved: 1 hour 10 min
Serving: One 9×5 pan or bread loaf
Ingredients:
- 4 Medium ripe bananas
- ¼ cup melted Miyoko’s European Style Cultured Vegan Butter
- ¼ cup unsweetened non dairy milk (Almond or Cashew)
- ½ cup light brown sugar
- 2 tsp pure Vanilla Extract
- 2 cups unbleached All purpose Flour
- 1 tsp cinnamon
- 1 tsp baking soda
- ½ tsp salt
- Optional nuts or sliced banana for topping if desired
Instructions:
Preheat the oven to 350F. Spray a 9×5 loaf pan with nonstick spray, then flour.
In a large mixing bowl, roughly mash the bananas. Add in the brown sugar, melted Miyoko’s Vegan Butter, vanilla, and non dairy milk. Whisk ingredients until incorporated. Sift in the flour, baking soda, salt, and cinnamon, and mix by spoon. Pour batter into your prepared pan. If using a sprinkle of nuts for a topping or extra banana slices, do so now. Bake for about 45 minutes. Cover with aluminum foil and bake for an additional 10-15 minutes. Bread is cooked thoroughly when a toothpick inserted in the center comes out with just a couple crumbs. Top with your favorite spread like Miyoko’s Vegan Butter and enjoy!
